A thousand years after the Minoans, around 1000 A.D., the Dorians came here and founded the largest of the four ancient cities of the island in the place where Pigadia is situated today and was called Potidaio or Poseidio.
Pigadia - the word means "wells" in Greek Language - took its name from the many wells which existed there and is a newer town with 1700 inhabitants.

Of course , it still retains moderate scale dense pine forests and sparsely in the north and south -center of the island. The rugged terrain of the island offers the visitor landscapes of outstanding natural beauty, combining the beauty of the mountain and the sea . High mountains on the one and steep ravines on the other . On the rocks and cliffs are the Falcon and Aigioglaros two endangered bird species .
Small bays and beaches with crystal waters formed along the entire eastern side of the island and is easily accessed, most either by paved roads, or by excursion boat from the town of Karpathos. Extended forests with coniferous trees especially Pinus Brutia consist magnificent scenery.
Deserve a visit from the 18th old Monasteries of the island such as Agia Anastasia in Arkasa or Agia Fotini in Karpathos town or the ruins of the ancient city of Vrykous ,north of the island and the ruins of the Arkesia, and the Castle and the ancient acropolis of Αpeirou.
To the White (30 km from the city), there is a Roman cistern and archaeological ruins. In the town of Karpathos and Arkassa there are ancient tombs, a sample of which is present in the Archaeological Museum of Karpathos. There are also scattered throughout the island traditional windmills and traditional buildings.
Arguably , the most good way to learn about the area and its beauty is by foot .

Depending on the season, the filling can be different as wild amaranth greens, zucchini and their blossoms, tops of the tomatoes in the summer, or spinach, leeks, pumpkins long winter. All seasons put nerolachana, dried or fresh onions (kromyofylla in Karpathos) and a good bunch of fresh or preserved fennel and dill.
Ingredients (for 10 pieces):
For the pastry
1 kg flour
1 tsp yeast
1 tsp salt 1/4 cup olive oil
Mix the ingredients for the sheets and add water, as needed to make a modest dough .
Knead well and leave the dough to rise 1.5 to 2 hours depending on the temperature.
Meanwhile , wash the greens thoroughly , cut into pieces 1 cm , mix and press to leave all the the water . Knead the dough again , we divide into 10 pieces and roll out with 3 mm thick sheets . Put the drained vegetables in a bowl, add the rice , salt , pepper and olive oil and mix well .
Divide the filling of 10 sheets and then fold like envelopes . Make the pita in pan and bake in preheated oven at 180 ° C, 15-20 minutes until golden brown sheet . Necessarily accompanied by a piece of
